Roasted Garlic Butter Recipe with Black Garlic: Creamy, Sweet & Full of Umami

This Roasted Garlic Butter Recipe with Black Garlic is simple, elegant, and deeply flavorful. Sweet roasted garlic meets the rich umami of I Love Black Garlic Purée, creating a spreadable butter that’s perfect for bread, steak, veggies, or seafood. It’s like compound butter — but elevated.

Yield about ½ cup • Time 10 minutes (plus roasting time)

Ingredients

  • 1 head regular garlic
  • 4 cloves black garlic or 1 tbsp I Love Black Garlic Purée
  • ½ cup (1 stick) unsalted butter, softened
  • ½ tsp sea salt (adjust to taste)
  • ¼ tsp lemon juice or zest
  • Optional: ½ tsp chopped parsley or chives for color

Instructions

  1. Roast the garlic Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves, drizzle with olive oil, wrap in foil, and roast 35–40 minutes until soft and golden. Let cool slightly.
  2. Mash Squeeze roasted garlic cloves into a bowl. Add black garlic (or purée) and mash with a fork until smooth.
  3. Combine Add softened butter, salt, and lemon juice. Mix until fully blended and creamy. Stir in herbs if using.
  4. Shape and chill Spoon onto parchment and roll into a log, or store in a jar. Chill 30 minutes before serving for best texture.

Tips and Variations

  • Use good butter: European-style butter gives the richest flavor.
  • For a smoky touch: Add a pinch of smoked salt or paprika.
  • Make it vegan: Use plant-based butter — black garlic adds natural depth.
  • Use it on: Steaks, roasted vegetables, crusty bread, baked potatoes, or pasta.
