Ingredients
- 1 whole egg, room temperature
- 1 tablespoon fresh lemon juice, or rice vinegar
- 1/2 teaspoon Dijon mustard
- 3/4 cup neutral oil, avocado or grapeseed
- 1 to 1 1/2 tablespoons I Love Black Garlic Puree, adjust to taste
- 1/4 teaspoon fine sea salt
- Optional, pinch of white pepper or smoked paprika
Instructions
- Build the base In a tall jar, add egg, lemon juice, Dijon, and salt.
- Add oil Gently pour oil on top so it sits above the liquids.
- Emulsify Place an immersion blender at the bottom and blend until thick, then lift slowly to pull in the oil.
- Add black garlic Spoon in the black garlic puree and blend until fully smooth.
- Season Taste and adjust with more lemon, salt, or puree as you like.
