What Is Black Garlic?
Black garlic is aged garlic that undergoes a fermentation-like process, resulting in a soft, black clove with a sweet, umami-rich flavor reminiscent of balsamic vinegar and tamarind. It’s a powerhouse ingredient that adds depth to any dish.
Ingredients
- 12 oz (340g) spaghetti or your preferred pasta
- 2 tablespoons olive oil
- 4 cloves regular garlic, thinly sliced
- 1 small red chili, finely chopped (optional)
- 1/4 cup fresh parsley stems, finely chopped
- 5 cloves I Love Black Garlic Organic Peeled Black Garlic
- 1/2 cup reserved pasta water
- Salt and pepper, to taste
- 1/3 cup breadcrumbs
- 2 tablespoons fresh parsley leaves, chopped
- Grated Parmesan cheese, for serving
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente, reserve 1/2 cup of pasta water, then drain.
- In a large skillet, heat olive oil. Sauté sliced garlic, chili, and parsley stems until golden and fragrant.
- Blend black garlic cloves with reserved pasta water until smooth to create the sauce.
- Add sauce to the skillet and simmer 1-2 minutes. Toss in pasta and coat evenly. Adjust with extra water if needed.
- In another pan, toast breadcrumbs in olive oil until golden. Add parsley and set aside.
- Serve pasta topped with breadcrumbs and Parmesan cheese. Enjoy!
